Chicken in brine

Ingredients

  • 1 Farmer’s Chicken (approximately 1.5 – 2 kg)
  • 1 liter of water
  • 3 tablespoons of coarse salt
  • 2 cloves of garlic, crushed
  • 1 teaspoon of black peppercorns
  • 2-3 bay leaves
  • 1 sprig of rosemary (optional)
  • 2 tablespoons of vinegar or lemon juice

Method of preparation

  1. Make the brine: In a large bowl, mix the water with the salt, crushed garlic, peppercorns, bay leaves and rosemary. Heat the mixture over medium heat until the salt is completely dissolved. Allow the brine to cool at room temperature and then add the vinegar or lemon juice.
  2. Preparing the chicken: Clean the Farmer’s Chicken of any remaining feathers and wash it well in cold water. Dry it with paper towels.
  3. Brining: Place the chicken in the brine, making sure it is completely covered in liquid. Cover the dish and let the chicken marinate in the refrigerator for at least 4-6 hours. For a more intense taste, you can leave the chicken in the brine overnight.
  4. Cooking: Preheat the oven to 190°C (375°F). Remove the Farmer’s Chicken from the brine and wipe it with paper towels. Place it in a baking dish and then in the oven for about 1-1.5 hours, or until the meat is tender and the skin is golden and crispy.
  5. Serving: Remove the chicken from the oven and let it rest for 10 minutes before slicing. Serve hot with your favorite side dish and assorted pickles.

Tips and tricks: Brined chicken goes perfectly with mashed potatoes, rice or grilled vegetables. Also, don’t forget a glass of white or red wine to complete this culinary experience.
