The first leaves are starting to turn yellow, the days are getting cooler, and we are spending more and more time indoors. Autumn is the season of change, and this is also reflected in the way we eat. As the days get shorter, our menu tends to adapt to these changes in colors and temperatures. It’s the perfect time to enjoy fall foods, full of warm flavors and seasonal ingredients. Therefore we also opened the cookbook to chapter 3: Autumn. We have prepared a series of delicious recipes that are only good to try this season. Are you curious already?

Beans and sausage combine perfectly in a savory soup, suitable for colder days. The rich flavor and texture of the bean soup will surely bring fall comfort to your plate.
Ingredients
Boil the beans: Soak the beans in cold water for at least 6 hours or overnight. After soaking, drain the water and rinse the beans well under cold water. Place the beans in a large pot, cover with water and add the bay leaves. Boil the beans until they are soft and easy to pierce with a fork. This process can take around 1-2 hours depending on the type of beans. Meanwhile, clean and wash the vegetables.
Prepare the soup: In a large pot, heat a little bit of oil and saute the onion until translucent. Add the carrots, potatoes and bell pepper and saute for another few minutes. Then, add the boiled beans and the Boieresti Sausages cut into pieces. Pour in enough water to cover all the ingredients and let the soup simmer over medium heat for about 20-25 minutes or until the vegetables are tender. Flavor the soup with salt, pepper and minced garlic. Taste and adjust the seasoning as you prefer.

Ingredients
Prepare the meat: First, cut into cubes the Agricola Joyful Chicken breast, then season with dried herbs and cook in a pan, with a spoonful of grapeseed oil. At the end, add the chopped garlic and mix with boiled green lentils, pitted olives cut into rounds, capsicum cut into strips, parsley, salt and freshly ground pepper.
Prepare the lentils: Boil the green lentils in cold water with a bay leaf and a crushed garlic clove. Do not add salt to the water before boiling, because it hardens! The water ratio is 1 to 3. When it boils, add salt and then cover the pot with a lid and let it simmer for another 15 minutes.

A seasonal dessert, which makes it more special. This pumpkin pie is perfect for the cold season, bringing the warm and comforting flavor of the main ingredient into the kitchen. It can be enjoyed as a dessert or even as a delicious snack during cool days.
Ingredients
Prepare the dough: In a large bowl, mix the flour with salt, then add the butter cubes and rub them gently with the flour until you get a crumbly texture. Add cold water gradually and mix until the dough comes together. Form the dough into a ball, wrap it in food wrap and let it rest in the fridge for about 30 minutes.
Prepare the filling: Boil the pumpkin cubes in water with a little bit of salt until soft. Drain well and mash them with a fork or hand blender until you get a smooth paste. In a bowl, beat the Happy Chicken Eggs, add the liquid cream and stir well. Add the sugar, cinnamon, nutmeg and a pinch of salt. Mix until all the ingredients are incorporated. Add the pumpkin paste and mix until you get a homogeneous composition.
Assemble and bake the pie: Preheat the oven to 180°C. Roll out the dough into a thin sheet and place it in a tart pan. Trim the excess dough from the edges. Pour the pumpkin filling into the tart pan. Bake the pie in the preheated oven for about 40-45 minutes or until the filling is cooked and the pastry becomes golden.
