Chicken in zacusca sauce – autumn in dishes

Ingredients:

  • 4 Puiul Farmer’s Chicken thighs
  • 2 cups of rustic zacusca
  • 4 ripe peppers, cleaned and cut into strips
  • 1 cup of chopped mushrooms (champignons, boletus mushrooms, galbiori).
  • 1 medium eggplant, ripe and diced
  • 2-3 cloves of garlic
  • salt, pepper and olive oil

Method of preparation:

  1. Zacusca is one of the most traditional Romanian dishes and lends itself wonderfully to this mix. If you don’t already have a jar of zacusca at hand, you can prepare rustic zacusca at home.   2. Heat a little oil in a pan and fry the Farmer’s Chicken thighs on both sides, until they become golden. Add the minced garlic cloves and let them become translucent.
