Ingredients

✓ 50 g green onions

✓ 15 g garlic

✓ 200 g zucchini

✓ 100 g red bell pepper, cut into cubes

✓ 30 ml grapeseed oil

✓ 100 g canned peeled tomatoes

✓ 8 eggs

✓ salt / freshly ground pepper / dried oregano

✓ 4 slices of whole wheat sourdough bread

✓ 30 ml olive oil

Method of preparation

Stew the green onions, crushed garlic and bell pepper in a little bit of water and grapeseed oil. Add a few cubes of zucchini, the peeled and crushed tomatoes, salt, freshly ground pepper and dried oregano.

Boil the sauce for 10-15 minutes on low heat. On the surface of the sauce, make some indentations with a spoon, place an egg in each of them and continue cooking with the lid on until the eggs are done.
This dish is eaten with bruschetta made from slices of lightly toasted whole wheat bread, rubbed with a clove of garlic and drizzled with olive oil.

Tips & Tricks
You can also make bread with sourdough at home. But what is sourdough? It is the ingredient that helps the dough ferment, replacing commercial yeast. Sourdough is made from water and whole wheat or rye flour, without sugar, honey, salt, oil or other ingredients. Sourdough bread is much tastier.
