Ingredients for 10 servings
✓ 20 slices whole wheat toast bread
✓ 10 eggs,
✓ 200 g Telemea cow cheese
✓ 800 ml buttermilk
✓ 200 g whole grains, muesli or crispy buckwheat
✓ 300 g fresh, seasonal fruit
Take the slices of whole wheat toast bread, and with a round cookie cutter or a glass make a hole in the bread slice. This way you are going to be able to pour an egg in the middle of the slice. Grate the cheese on the bread slice toast, crack an egg in each circle and bake for 5 minutes at 170*C, until golden brown.
Serve them with buttermilk mixed with grains, muesli or crispy buckwheat and some fresh berries, depending on their seasonality.
Tips & Tricks
If you don’t want to bake eggs together with the toast, you can just as well prepare eggs separately, in the oven, on baking paper, after which, with the metal shape you used to cut the bread, you can remove the excess egg white, which you obviously don’t throw away, but add to a salad.
