ingredients:
✓ 6 eggs
✓ 1 tbsp green parsley, finely chopped
✓ 150 g ricotta
✓ 100 g mozzarella
✓ 100 g kapia pepper
✓ 150 g lettuce
✓ 100 g tomatoes
✓ 30 ml olive oil
✓ Salt
Whisk the eggs with a fork, gently, without foaming. We perform this operation in order to obtain a compact sheet, otherwise we risk tearing it at the time of rolling.
Mix the eggs with parsley and a pinch of salt. Bake the omelette in a pancake form the form and fill it with a mixture of ricotta, red bell pepper cut brunoise, cubes of fresh mozzarella and strips of red kapia pepper, and cut them into round pieces. Serve it with a side salad, made from lettuce, tomatoes, olive oil and salt.
Tips & Tricks
Mozzarella can also be replaced with a goat cheese spread. Try to introduce alternatives to cow’s milk in your diet.
