Even if it’s not winter, sometimes we miss a soup full of flavor. A chicken soup is not just the cure for a cold or a tummy ache, it’s a perfect meal when you want something light but tasty.

When it comes to a chicken soup, we can opt for dumpling soup, chicken borsch, Radăuți soup, chicken noodle soup. Today’s soup is chicken noodle soup, perfect for any time of the year.

Method of preparation

If you have tried several times to recreate the chicken soup of your childhood, but have not succeeded, it means that you have not tried Agricola’s chicken.

1. Put a large pot of water on the fire. Make sure it is big enough for the whole chicken.

2. Put the chicken in the pot and let it cook until it’s almost done. Chef’s Tip: Being a slow-growing chicken, it will not cook as well as a normal chicken. If you have a pressure cooker, you can use it to cook the meat faster.

3. While the chicken is boiling, cut the vegetables into cubes.

4. Put the vegetables in the pot when the chicken is ¾ done. Don’t forget the salt.

5. Let the soup boil gently, until it is clear. Chef’s Tip: Leave it on low heat, even if it takes longer.

6. While the chicken is cooking, try the homemade noodles.

7. It may seem like a lot of work, but homemade noodles are just flour and an egg, well beaten.

8. After beating the egg with the flour, knead the cake.

9. Spread the cake with a rolling pin then cut it into thin strips. Chef tip: if you have a pasta machine, put the dough through the machine, it can save you time.

10. After the vegetables and chicken have cooked, strain the soup.

11. Place some carrots and some of the meat next to the soup stock. If you like, you can also add celery.

12. Put the pot with the soup stock and noodles back on the heat. Make sure it’s medium heat.

13. After a while, put back the chicken and vegetables.

14. Finally, chop a little parsley and put it in the pot, to taste.

This soup recipe is full of flavor. The homemade noodles are much better than commercial ones. We call it chicken soup from home because of the chicken used.
