Ingredients for 2-3 servings:

✓ 150 g boneless chicken breast (Puiul Fericit)
✓ 1 Agricola Happy Egg
✓ 3 tablespoons oats
✓ 1 tablespoon grated parmesan
✓ 25 g butter with 82% fat
✓ 2 medium carrots
✓ a pinch of salt
✓ a pinch of turmeric
✓ half a lemon
✓ 1 tablespoon extra virgin olive oil
✓ half a teaspoon sesame seeds

For the puree:
✓ 2-3 medium potatoes
✓ 2 handfuls of baby spinach
✓ 1 tablespoon butter

Method of preparation

Cut the chicken breast as for mini schnitzels, in wider strips or whatever you want to call them and dip each piece of meat in beaten egg and then through a mixture of 3 tablespoons of oat flakes and 1 tablespoon of grated parmesan.

Brown in the oven, on a tray with baking paper, for 20-25 minutes, at 175°C.

Dice and boil 2-3 medium potatoes, then prepare the mashed potato base. In the last 2 min. of the potatoes boiling process add two handfuls of baby spinach.

Drain the water from the vegetables, mash and mix with 1 tablespoon of high-fat butter and salt, and so we have a Martian, green, alien-like mash.

The salad is prepared very simply: mix the grated carrots with turmeric, lemon juice, 1 tablespoon of olive oil, ½ teaspoon of sesame seeds and salt.


Tips & Tricks

Chicken breasts love herbs so don’t be shy about using thyme, sage or rosemary in chicken recipes. A very important thing to remember: if you cook it in the oven, do not overcook it. You dehydrate it, and thus risk making the chicken unhappy!
