Ingredients for 2 servings

✓ 200 g chicken breast, minced on a fine sieve

✓ 1 tsp herbes de Provence (or substitute with some dried oregano, basil and a pinch of rosemary)

✓ 1 tsp classic mustard

✓ 2 sweet potatoes

✓ 1 tbsp grapeseed oil

✓ 150 g fresh cucumbers

✓ ½ avocado

✓ a few sprigs of dill

✓ juice from a ¼ lemon

✓ ½ ground flax seeds

Method of preparation

Season the minced chicken with herbs de Provence (or the spices shown above), a pinch of salt and 1 teaspoon of mustard. Form the burger patties and bake them in the oven on a baking paper-lined tray at 175°C for 20 minutes.

Cut the sweet potatoes into quarters, boil them for 5 minutes, season with a bit of oregano and grapeseed oil, then bake in the oven until golden (you can bake them alongside the burger).

Meanwhile, prepare the cucumber salad as following: mix the cucumber cubes with diced avocado, finely chopped dill, salt, lemon juice, olive oil and flax seeds.

Tips and tricks

If you buy too many sweet potatoes, don’t worry! You can bake and mash them, then store them in a plastic container in the freezer for up to 2 months.
