Ingredients for 10 servings
✓ 450 g pie sheets, 1 package
✓ 1 kg cottage cheese
✓ 100 g raisins
✓ 15 g lemon zest
✓ 15 g vanilla sugar
✓ 5 ml vanilla essence
✓ 5 ml rum essence
✓ 50 g dried apricots, cut into cubes
✓ 75 gr sugar
✓ 3 eggs
✓ 30 gr semolina
Mix the cottage cheese with eggs and then add the rest of the ingredients, leaving the semolina for the end, when you will incorporate it into the mixture.
Place the mixture on the pie sheets, rolling carefully without pressure, as the roll can easily tear.
Bake at 175°C for 40 minutes. Sprinkle with vanilla sugar and serve.
Tips & Tricks
Use fresh, 20% fat cottage cheese, which is firmer in texture and not runny.
