Ingredients for 10 servings
Meatballs soup
✓ 500 g of minced chicken breast meat
✓ 50 g slim grain rice
✓ 3 gr parsley, very finely chopped
✓ 1 l chicken soup
✓ 50 g carrots
✓ 50 g celery root
✓ 50 g parsnips
✓ 5 g lovage, finely cut
✓ 300 ml borș (borscht)
Soup with chicken meatballs
Season the chicken meat, add rice and parsley and mix until combined. From this mixture form the meatballs and boil them into the chicken soup with borș (borscht).
Boil them for maximum half an hour, depending on the rice grain. Separately, sauté the mentioned vegetables for the soup, all cut into desired shapes.
Once sauteed, add them into the soup pot and boil for about 5 more minutes. Turn off the heat and add the greens. Keep warm until serving.
