Ingredients:
✓ 1/2 whole Agricola Farmer’s Chicken
✓ 14 red chillies (grilled)
✓ 60 ml olive oil
✓ 80 gr. red onion (grilled)
✓ 5 garlic cloves
✓ 40 ml apple cider vinegar
✓ 10 gr. smoked paprika
✓ 2 bay leaves
✓ 2 teaspoons salt
✓ 1 teaspoon pepper
✓ 1 teaspoon oregano
✓ a lemon (half grated peel)
✓ 10 gr. sweet Boya
Method of preparation:
Put the roasted peppers, onion, red pepper, garlic, smoked paprika, pepper, salt, oregano, sweet paprika in a blender or food processor and blend until you get a smooth paste.
Prepare a pot and transfer the composition into it and add the bay leaves. Let it boil for approx. 20 min. Allow the sauce to cool and add the lemon zest and juice, olive oil, apple cider vinegar and mix well. Coat the Farmer’s Chicken well with the sauce and leave it to marinate for at least 2 hours. Prepare the oven at a temperature of 180 degrees and put the marinated chicken in for about 30 – 36 min. After this time cook it on the grill on a mild fire, as this will give the cicken a grill smoked flavour. If you don’t want to put it on the grill, leave it in the oven for another 10 minutes.
