Ingredients for 2 servings
✓ 3 Agricola “Eye-catching” eggs
✓ 2 tbsp of olive oil
✓ 1 tbsp of grape oil
✓ 100 ml unsweetened almond milk
✓ 2 tbsp diced red onion, brunoise cut
✓ 2 tablespoons red bell pepper, diced
✓ 1/2 tsp dried basil
✓ 1/2 tsp dried oregano
✓ 50 g baby spinach leaves
✓ 40 g goat telemea cheese
In a non-stick pan, sauté the finely chopped red onion in olive oil and water, then add the diced red bell pepper and. Finally, add the spinach leaves. Let the vegetables cool down and mix with the grated telemea cheese.
Separately, whisk the 3 eggs with a cup of almond milk and dried herbs. Pour the egg mixture into a round baking dish and add the vegetables on top. Bake at 180°C for 10 minutes or depending on the thickness of the omelette.
Before serving you can add some more grated telemea cheese on top. In this way, you will accentuate all the flavours of this morning treat.
Tips & Tricks
Speaking of almond “milk”, it’s very easy to make some at home. How? Leave the almonds to soak overnight, the next day drain the water, add fresh water and, using a high speed blender, turn everything into a smooth paste. Drain the paste through a cheesecloth and the resulting liquid is nothing but almond milk.
