Ingredients for 10 servings
✓ 700 g grated carrots
✓ 2 eggs
✓ 125 g full fat yogurt
✓ 50 g brown sugar
✓ 50 ml grape oil
✓ ½ sachet of baking powder
✓ 3 ml vanilla essence
✓ 150 g flour
✓ 150 g dried fruit
✓ 75 g walnuts
✓ 1500 ml milk
Clean the eggs and then separate the egg yolks from the egg whites. Mix the egg yolks with sugar and essences until they double in volume and become lighter in color.
Whip the egg whites with the rest of the sugar. Gradually add the oil and yogurt, homogenizing with a spatula, then incorporate the flour, baking powder, dried fruits, nuts and grated carrots, finally adding the beaten egg whites. Pour the composition into a baking mold lined with oil and flour and bake at 170°C for 45 minutes. Serve with a glass of cold milk.
Tips & Tricks:
You can cake prepare the decorative elements from the cake with cream cheese (the same as for cheesecake). Use unsweetened and slightly salty cream because you’ll get the perfect contrast. Use 15 grams per portion!
