This recipe is part of the Healthy Nutrition Guide for Children, created by the “Agricola Neam de Gospodari” Association
Ingredients:
✓ 600 g peeled shrimps
✓ 200 g zucchini
✓ 150 g diced tomatoes
✓ 200 g whole wheat shell pasta, different colours
✓ 100 g arugula
✓ 30 ml grape seed oil
✓ Garlic
✓ Freshly ground salt/pepper
✓ 30 ml of olive oil
Roast the shrimps in olive oil with 2 crushed garlic cloves and oregano. Add the diced tomatoes and the zucchini cubes. Meanwhile, cook the pasta al dente in salted water.
Mix the boiled pasta with the shrimps. Serve it warm with a handful of arugula on top, sprinkled with a little bit of grapeseed oil.
Tips&Tricks:
If you have left some arugula left after preparing this dish, put it in a blender along with some walnuts, parmesan and olive oil and you’ll get a cream that will help you to give a special flavour to the pasta dishes.
