This recipe is part of the Healthy Nutrition Guide for Children, created by the “Agricola Neam de Gospodari” Association
Ingredients:
✓ 250 g whole wheat flour
✓ 1 sachet of organic baking powder
✓ cinnamon
✓ 4 eggs
✓ 3 tbsp melted butter
✓ 3 tbsp honey
✓ 1 cup of grated pumpkin
✓ a handful of walnuts
✓ 100 g of mascarpone
Peel the pumpkin and grate it on a large grater. Sauté it with a tablespoon of grapeseeds oil, then let it cool completely. Whisk the eggs together with the melted butter and 2 tbsp of honey. Add the solid ingredients: sauteed and cooled pumpkin, flour, baking powder, cinnamon and coarsely chopped walnuts.
Pour the obtained composition into a cake form or sponge cake pan (pay attention to its height! The higher it is, the bigger the risk of not cooking in the middle). Bake the cake for 35 minutes at 180°C.
Mix 100 grams of mascarpone with 1 tablespoon of honey and chopped walnuts. After the cake has cooled, decorate it with the mascarpone “glaze” and some berries, if you have them at home.
Tips&Tricks:
Choose a well-ripened pumpkin. A raw pumpkin is neither as aromatic nor as sweet as you would like. How do you know if it is ripe? Knock the pumpkin peel. When it sounds empty, it means that it is ripe or if you are not sure, it is better to buy a cut slice. Its intense orange color will show you how ripe it is.
