Ingredients

✓ 200 g whole wheat baguette

✓ 240 g boiled chickpeas

✓ 30 g tahini

✓ 1-2 tbsp of lemon juice

✓ salt / freshly ground pepper

✓ 50 ml olive oil

✓ 50 g baked beetroot

✓ 4 eggs

✓ 150 g carrots

✓ 150 g bell pepper


Method of preparation

Prepare the hummus: put the chickpeas in a blender together with the sesame paste, lemon juice, baked beetroot, salt and pepper. Process until it becomes a spreadable paste. Taste and adjust the seasoning if needed. Boil the eggs until hard, 10 minutes from the moment the water starts boiling. Cool and cut into rounds. Spread 50 g of hummus onto the baguette slices and place the boiled egg slices on top. Sprinkle the carrot and bell pepper sticks with a little olive oil and a pinch of salt and serve them next to this sandwich.

Tips & Tricks:
If you want to boil your chickpeas at home, leave them to soak overnight. Rinse them and boil them with some parsnip and carrot. Change the water two to three times until they are fully cooked, just like when boiling beans.
