Ingredients for 1 serving
✓ 2 slices of whole wheat toast
✓ ½ avocado
✓ ¼ lemon
✓ 30 g Telemea goat cheese
In order to place an egg in the middle of the bread toast, cut a larger circle in a slice of whole wheat bread.
Mash the avocado and mix with lemon juice and some crumbled feta. Spread the avocado paste with feta on a slice of wholemeal bread, place the cut-out slice on top, and crack an egg into the circle. Place the sandwich in an oven tray and bake until the egg is cooked and the bread has a lightly golden colour.
Tips & Tricks
Instead of throwing away the avocado pits, let them dry, then grate them into a powder. Add this powder to soups, smoothies, salads and in many other recipes or in different type of diets.
They have some fantastic properties, so there’s no need to throw avocado pits away.
